Blackberry Baked Brie

Blackberries, thyme, and brie… these are a few of our favorite things. Wrap it in puff pastry and bake it? Even better! Baked brie can be done in so many delicious ways but this combo is the perfect blend of sweet and savory. It also makes for a beautiful festive and easy appetizer to share at your holiday gatherings. 

The blackberry sauce is so easy to make just by cooking down the berries with a little sugar and thyme. If you are in a rush you can use a store-bought blackberry jam and top with fresh berries for texture, and thyme for a complimentary savory flavor. 

Serve this baked brie straight from the oven in all it’s gooey glory with your favorite crackers.

Blackberry Baked Brie

INGREDIENTS
  • 1 sheet puff pastry (thawed)
  • 1 8oz. Wheel Doublin’ Down Brie Style cheese
  • 1 cup fresh blackberries
  • 2 tablespoons sugar (or 2-3 tablespoons blackberry jam)
  • 1 tablespoon fresh thyme
  • 1 egg
  • 1 Tbl water
INSTRUCTIONS
  1. Preheat the oven to 400 degrees.
  2. In a small saucepan over low heat add blackberries, sugar and thyme. Let simmer for about 8-10 minutes, gently stirring and smashing the blackberries occasionally to create a sauce. I like to leave some blackberries almost whole for texture. Alternatively, you can use 2-3 Tbl of pre made blackberry jam and add in the fresh berries. Reserve some whole blackberries and thyme sprigs for garnish.
  3. Meanwhile, as the sauce simmers, roll out the puff pastry into a 12×12 inch square. Cut off the top rind of the cheese and discard. Place the cheese wheel in the center of the puff pastry.
  4. Top the cheese with the sauce (or top with your favorite blackberry jam, fresh blackberries and fresh thyme).
  5. Carefully fold and tuck the puff pastry over the top of the brie and topping to create a wheel. Be sure the seams overlap so there are no gaps (it will get oozy).
  6. Make a quick egg wash by whisking together the egg and tablespoon of water. Brush the egg wash over the puff pastry. This will give it a lovely golden hue.
  7. Bake at 400 degrees for 30-35 minutes, or until dark golden brown. Remove and serve with crackers.
