Easy Yogurt Apple Pie Parfait

Apple season is officially upon us! You would think that It’s uncommon for apples to grow in the South due to the harsh dry heat, but there are delicious Texas varieties that defy the odds. Some of our Texas-grown favorites are September Wonder, Evercrisp, Gala, Honeycrisp, and Cameo (also great on a cheeseboard!). 

Pick your seasonal favorite to dice up! You can layer with any granola you like or try this stove-top granola recipe. You can adapt it with whatever nuts you have on hand and even add dried cranberries. Just keep an eye on it for 4-6 minutes, it crisps up real quick!  

These easy parfaits are like having dessert for breakfast. With only a little sugar, they are a nutritious twist on the all-American apple pie. So you can have your pie and your health too!

Easy Yogurt Apple Pie Parfait

INGREDIENTS
  • 2 apples peeled and diced (we used gala)
  • 3 tablespoons water
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon
INSTRUCTIONS
  1. Simmer diced apples, water, brown sugar, and cinnamon in a saucepan over medium to low heat. 
  2. Stir frequently and cook until the apples are softened (about 5 minutes). 
  3. Transfer the apple mixture to a bowl. 
  4. Cover and refrigerate. Layer parfaits apples, yogurt, and your favorite granola.

For stovetop granola:

INGREDIENTS
  • 1-1/2 teaspoons coconut oil
  • 1 cup old-fashioned rolled oats
  • 1/4 cup pecans or sliced almonds
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup dried cranberries (optional)
INSTRUCTIONS
  1. In a skillet over medium heat, add oil and allow it to warm up for about 2 minutes.
  2. Add the oats and almonds. Cook, stirring continuously, for 4 to 6 minutes, or until the oats turn a golden brown.
  3. Transfer the toasted oats and nuts to the parchment-lined sheet pan and set aside.
  4. Add 3 tablespoons of maple syrup and cinnamon to the heated skillet. Cook, stirring, for 1 minute or until the mixture is bubbling and thickened.
  5. Pour the oat mixture back into the skillet and stir to coat with the syrup. Cook for 1 minute.
  6. Take the skillet off the heat to stop cooking the granola.
  7. Stir the dried cranberries into the granola.
  8. Line another sheet pan with parchment paper. Pour the granola onto the sheet pan and allow it to cool for 5 to 10 minutes. The granola will become crunchy as it cools.
